The article discusses the results of studying the influence of probiotic strains of different taxa and their composition on cholesterol metabolism in vitro and in vivo. The studied strains of probiotic microorganisms have displayed different abilities to reduce cholesterol concentrations in culture media. In order to enhance the target function, two compositions of probiotic strains were created that had a more marked ability to metabolise cholesterol and were not antagonistic toward each other. A composition has been specified that was more effective in cholesterol metabolism, which has been proven by the results of not only in vitro studies, but also on animals. We have obtained data that permit to recommend the created probiotic composition in the biotechnology of production for specialized purposes, and, in particular, dietetic prophylactic nutrition.
